A quantitative definition of corn kernel whiteness, and a fast, accurate, and easy to perform approach tomeasure corn whiteness was developed. The whiteness values of 63 corn samples with large color variations weremeasured. Representative results were presented and whiteness values were able to show color differences of corn kernelsquantitatively and reliably.
