This manuscript describes a thin-layer model for drying of in-shell peanuts which treats the pod as two separate components (kernels and hulls) with moisture movement proportional to a combination of moisture content gradients (liquid diffusion) and vapor pressure gradients (vapor diffusion). Data from the literature were used for model evaluation and the determination of drying parameters. Good fits of experimental data were obtained and the thin-layer model is considered accurate enough for inclusion in a bulk drying model.
