Camellia oleifera, honored as the “oriental olive oil”, is a high-quality woody oil crop. This review constructs a multi-dimensional quality matrix as an integrated framework that cohesively links safety, nutrition, and flavor. Genetic, growth environmental and processing-related determinants of Camellia oleifera quality were thoroughly analyzed. The current applications of artificial intelligence (AI) in disease diagnosis, intelligent and non-destructive detection, maturity evaluation, and adulteration identification of Camellia oleifera are summarized. Regarding future prospects, research efforts may be directed toward the development of integrated systems for Camellia oleifera quality evaluation that are multimodal, interpretable, portable, and transferable across diverse cultivars.
