Taste threshold concentrations (or equi-sour concentrations) of organic acids are significantly related to their octanol/water partition coefficients. Since the latter appear to model aqueous/membrane partitioning in biological systems this suggests that absorption of an acid into the taste cell membrane plays an important role in the perception of the sour taste.
