This review summarizes the underlying causes of postharvest diseases in key vegetable crops and describes novel control strategies including biocontrol, natural antimicrobials, physical treatments, and innovative packaging technologies. A sustainable Integrated Postharvest Disease Management (IPDM) approach is proposed, based on overlapping preventive methods designed to reduce postharvest losses and maintain produce quality. The practical value of multi-omic analyses in elucidating mechanisms of pathogenicity and host resistance is also discussed.
