We report a B-shaped Mach-Zehnder interferometer (MZI)-based fiber sensor for monitoring honey quality. The MZI was fabricated using a single-mode fiber (SMF) wrapped in a B-shaped configuration with two loops, each functioning as a separate MZI. One MZI detects fructose, and the other detects glucose. The adulterated samples were prepared by adding fructose and glucose to pure honey, with concentrations ranging from 0% to 50%. For fructose detection, the sensitivity was −0.236 nm/%. For glucose detection, the sensitivity was −0.14514 nm/%. The results show that the B-shaped MZI can function as a dual-parameter sensor for monitoring honey quality.
