The article systematizes innovative technologies used in food service organization and substantiates their role in transforming business processes in the hotel and restaurant industry. The research is relevant because digitalization, changing consumer behavior, labor shortages, growing demands for speed and personalized service, and the need to reduce operating costs and food waste are all converging. It is argued that innovation in food service should not be reduced to the implementation of isolated technical solutions, since its effectiveness depends on the degree to which technologies are integrated into the complete service and production cycle: demand forecasting, menu planning, procurement and inventory control, food production, ordering, service delivery, distribution, payment, feedback collection, and food waste management. The main groups of innovations are systematized into digital customer interfaces; automation and robotics; artificial intelligence and predictive analytics; Smart Kitchen and Internet of Things solutions; advanced food production technologies; online food delivery and omnichannel platforms; and traceability, safety, and sustainable resource management technologies. These solutions deliver faster service and more standardized operations, and they also enable a new food service management model in which data become a resource for personalization, forecasting, cost control, and loss reduction. The authors propose an integrated architecture for innovative food service organizations and a digital maturity model that reflects a transition from fragmented automation to an interconnected, data-driven, and sustainability-oriented service environment. Based on recent empirical research, the article shows that technological solutions have a non-linear effect: they may increase satisfaction and productivity, but if they do not match the service format, staff digital competencies, or guest expectations, they may create new service failure points. This study focuses on food waste management technologies, including computer vision and artificial intelligence systems. Practical principles for implementing innovation are formulated based on customer orientation, economic feasibility, technological compatibility, safety, inclusiveness, and sustainable development.
