In the food and nutraceutical sector, a scientific approach to data harmonisation is to represent data according to reliable nomenclature, description, and classification systems. Data traceability in the food market ensures transparency, safety, and quality. The aim of this research was to apply the LanguaLTM and FoodEx2 coding systems to fishery waste to produce a VITADWASTE Project Code Database. LanguaLTM and FoodEx2 represent the main classification and description systems, well-developed, widely used, and recognised at European and international levels. The codes created make products suitable for inclusion in composition databases. Both coding systems are well suited to coding fish categories. Coding is a tool that allows us to distinguish different products along the production chain based on specific characteristics primarily related to the environment, production, and process technology. Sharing, traceability, and the dissemination of data—aligned with FAIR principles—enhance accessibility and usability, facilitate efficient data sharing among stakeholders by allowing the promotion of the nutritional and nutraceutical characteristics of products to protect consumers.
