One of the most attractive tourist destinations in recent years has been the development of gastronomic tourism, which is considered as a synthesis of economic geography, an assortment of traditional products and their production, to actively attract foreign and Russian tourists who have the desire and opportunity to comprehensively explore the traditions of the regions and the peculiarities of the local population, as well as to destroy persistent stereotypes. The article is devoted to the study of the peculiarities of the technology of developing a gastronomic map of the Volga Federal District. Its purpose is to assess the degree of knowledge of national cuisines and create a gastronomic map for regions with great potential for the development of various types of tourism. In the course of the study, it was found that one of the tools for promoting gastronomic tourism is the development and implementation of a gastronomic map reflecting information about this type of tourism in a particular region. As a result, the author’s method of creating a gastronomic map was used, which consists of four stages, and the criteria for selecting dishes for their mapping were presented. Using the example of the regions, tourist routes were created, based on the gastronomic features of national cuisines. In addition, the authors concluded that a gastronomic map is tourist information containing information about gastronomy, including regional and national cuisines, gastronomic tours, restaurants and shops selling local products, etc. And the main functions of the gastronomic map are communication, efficiency, cognition and prognostication.
