In modern conditions characterized by instability of socio-economic processes, it is necessary to propose new economic models that take into account current changes. The article examines a number of problems of ensuring food security. The most important task is to ensure the sustainable and economically safe functioning of agricultural enterprises against the background of the increasing instability of the socio-economic space. It is also proved that in order to effectively combat the negative consequences in the agricultural sector, it is advisable to explore new approaches to ensuring sustainability in the face of increasing threats and risks in the activities of agricultural enterprises, to consider models for the formation of an organizational mechanism for the implementation of optimization processes in enterprises at risk. For this purpose, a study is being conducted on the transformation of risk during optimization, changes in its main characteristics and the quality of its impact on the ongoing production processes of the enterprise. It is concluded that there is a need for a special organizational impact on the changing complex of risks in the interaction of production factors and a model of interaction of production factors is proposed, taking into account uncertainty and risks. The study discusses several levels of implementation of a risk-based approach to industry management: macro-level, meso-level and micro-level. In conclusion, the need for an integrated approach to ensuring economic security and sustainable development is emphasized, as well as the importance of personnel training and the introduction of a risk-based approach to public administration in national projects and government programs.
