An automated system for predicting the quality of fondant candies based on a neural network has been developed. The training sample of technological parameters and the neural network model have been described. The algorithm of the forecasting system operation has been considered. Recommendations for adjusting process parameters have been obtained and their impact on the assessment of product quality for the training sample have been determined.
