Analysis reveals significant fishery waste in Puerto Ángel, indicating potential for nutritional utilization.
The process of obtaining files generates 60% of organic waste, which represents socio-environmental problems. The objective was to determine the volume, problems and nutritional content of fishery waste generated in Puerto Ángel, Oaxaca. To estimate the amount of waste, 60 surveys were applied through stratified sampling to the population benefited by coastal fishing (fishermen, filleters, restaurateurs and marketers). The Mann-Witney and Kruskal-Wallis tests were applied to the data. The data on protein, dry matter, ash and fat were subjected to an ANOVA, considering the species (tuna, sailfish and dorado) as a fixed effect. The main species captured and filleted were tuna, dorado and sailfish and their waste is discarded at sea or dumped in the open air. However, filleters and marketers pay to dispose of it, which represents approximately 38 t per month of waste with important nutritional characteristics that are not being used. Tuna waste showed the highest (p ≤ 0.05) averages of dry matter (34.96 %) and protein (68.42 %) and the lowest averages of fat (6.54 %) and ash (10.91 %). Fish waste in Puerto Angel represents a significant volume, as when discarded at sea (viscera, heads, skeletons, skins) it becomes a source of beach pollution, as it tends to return to the beaches; however, due to its nutritional properties, it can be processed for potential uses as animal feed or organic fertilizer.
