Chocolate is a highly popular food product due to its unique flavor, texture, and nutritional benefits. Cocoa butter, non-fat cocoa solids, and sucrose are key components of chocolate and play crucial roles in determining its sensory characteristics. However, challenges such as fat/sugar bloom, heat sensitivity, and health concerns associated with high fat and sugar content have driven research toward innovative chocolate formulations. This review examined current technological challenges in chocolate production, focusing on strategies to improve bloom resistance and heat resistance. It further explored emerging health-oriented and sustainability-driven innovations, including low-fat/low-sugar formulations, functional ingredients, 3D/4D printing, and plant-based alternatives. Innovating formulations requires balancing technical feasibility with consumer expectations for quality. This review introduced objective and subjective methods for evaluating chocolate texture and sensory acceptability. Overall, this review provided directions for researchers and the food industry to develop a new generation of chocolate.
