The adulterations and the inadequate handling of honey have been recurrent in Brazil due to its high cost and increasing demand as a natural product, making it necessary to carry out physical-chemical analyzes for its characterization in order to determine if it conforms to the standards established by the bodies responsible for supervising the food product. The present research had as objective to analyze qualitatively and quantitatively samples of four honeys commercialized in the municipality of Presidente Médici-RO (three acquired in the local commerce and one with a beekeeper). The analyzes carried out included the assessment of moisture content, ash content, total acidity and conductivity. As a result, it was possible to verify that, of the four samples, two presented total acidity above the values allowed by Brazilian, MERCOSUR and Codex Alimentarius (maximum of 50.00 meq. Kg-1). The other parameters are within the allowed. Therefore, it was observed that the commercially available samples presented values close to those of the sample acquired with the producer, having the parameters moisture content, ash content and conductivity within the standards required by the legislation.
