This review evaluates synthetic strategies for α‐ and β‐damascone in industrial applications, indicating future research directions.
Damascone, a precious natural fragrance primarily isolated from rose essential oil, is widely distributed in the flowers, leaves, or essential oils of various aromatic plants such as Rosa damascena , Osmanthus fragrans , Camellia sinensis , and Viola odorata . It exerts distinctive olfactory notes reminiscent of rose, strawberry, apple, and fresh sweet florals and serves as a key aroma component in numerous food matrices. Owing to its unique sensory profile, damascone is extensively employed in the flavor and fragrance industries. This review systematically summarizes and evaluates the synthetic routes toward α‐damascone and β‐damascone—the most widely used compounds of the damascone family—from an industrial‐application perspective and critically analyzes emerging synthetic strategies, offering insights into future research directions.
