Qualitative research reveals enhanced operational efficiency and sustainability practices improving customer satisfaction in Italian restaurants.
This study investigates how Italian restaurants adapt their supply chain operations to accommodate seasonal variability. Based on in-depth interviews with 38 restaurant owners, chefs, supply chain managers, and procurement professionals, the research identifies key challenges and innovations in ingredient sourcing, inventory management, and menu adjustments. Critical themes include demand forecasting and inventory control systems, which enhance operational efficiency, minimize waste, and optimize technology utilization. The findings reveal a growing emphasis on sustainability, with restaurants prioritizing locally grown and ethically produced ingredients. Collaboration with nearby suppliers emerges as a strategic approach to mitigate risks and ensure consistent availability of essential components. Menu adaptations based on seasonal ingredient availability help control costs while enhancing customer satisfaction through distinctive, seasonal offerings. Overall, the study demonstrates that Italian restaurants increasingly employ innovative and flexible supply chain strategies to maintain culinary quality, meet sustainability expectations, and respond effectively to seasonal fluctuations. These insights contribute to a deeper understanding of supply chain management in the foodservice industry, offering practical implications for both practitioners and academics.
