Review summarizes High-Throughput Sequencing applications in analyzing antimicrobial resistance in foodborne pathogens, highlighting its significance.
High‐throughput sequencing technology (HTST) can effectively analyze the sequence information in the DNA of samples and provide a comprehensive understanding of the survival and pathogenic mechanisms of foodborne pathogens during food processing. This review summarizes the origin and development of HTST and its working principle, and discusses the application of HTST in foodborne pathogens both domestically and internationally. Additionally, research progress on the topics of antimicrobial resistance genes and tracking is discussed. The potential application of HTST in food microbiology research is expected to provide technical support for future research in this field.
