Quinoa, a highly nutritious pseudocereal, has gained worldwide recognition as a healthy food option. Each variety exhibits a distinct compositional profile, providing specific physiological benefits. White quinoa is the most extensively studied variety and is valued for its versatility and neutral flavor, making it a common choice in food product development. In contrast, red quinoa is characterized by its higher antioxidant content, which may contribute to mitigating oxidative stress and reducing the risk of chronic diseases. Black quinoa, although less widely utilized, is rich in nutrients and bioactive compounds that may confer additional health benefits. The incorporation of quinoa varieties into the diet may promote overall health and support disease prevention, reinforcing quinoa´s role as a functional food in modern nutrition. This review provides an overview of published evidence on the nutritional properties, food application, and health impact of quinoa. Specifically, three quinoa seed varieties (white, red and black) highlighted differences in their nutritional profiles, their relevance in food development and their contribution to human health.
