Comparison of Beef Color Stability during Display of Two Muscles between Japanese Shorthorn Steers and Japanese Black Steers

Fourteen Japanese Shorthorn steers (10 months of age) and fourteen Japanese Black steers (10 months of age) were fed commercial formula feed and hay until slaughtered. Japanese Shorthorn steers and Japanese Black steers were slaughtered at 28.30.7 and 29.31.3 months of age, respectively.
