Report details a workshop on developing a framework for studying recipes as cultural heritage, promoting innovation.
This report documents the conception, structure, implementation, and outcomes of the Methodological Framework Workshop (MFW) held at the University of Gastronomic Sciences (UNISG), Pollenzo, from 22– 25 October 2025. The workshop was organised within Work Package 5 (WP5 – Cooking: Recipes and Applications) and fulfils Task 5.1 (T5.1), which required the development of a flexible and adaptable methodological and analytical framework for the study of recipes as cultural heritage through the interconnected concepts of mobility, agency, and interdisciplinarity. The report is a deliverable (D5.1) for the European Union-funded RELISH (Reframing European gastronomy Legacy through Innovation, Sustainability and Heritage) project, which innovates culinary recipes as digital and cultural tools to promote cultural heritage and connect with emerging adults.
