In an experiment that searched for antioxidant efficacy in Korean plants, the ethyl acetate fraction of guzeunggupo-processed Allium sativum L. was observed to have a strong scavenging effect on DPPH radicals. Using the Caenorhabditis elegans model system, the ethyl acetate fraction of guzeunggupo-processed A. sativum decreased reactive oxygen species (ROS) levels, while the oxidative stress resistance of superoxide dismutase (SOD) and catalase was enhanced. In addition, we found that the ethyl acetate fraction of guzeunggupo-processed A. sativum produced resistant proteins that resist oxidative stress using transgenic strain CF1553.
