With a globalized market and the need for quality production, the use of pesticides in grape crops is common to prevent parasite attacks, so that pesticide residues are frequently found in wines. Therefore, a UHPLC-MS/MS method was developed for analysis of pyrethroid (bifenthrin, cypermethrin, and deltamethrin) and anilinopyrimidine (cyprodinil and pyrimethanil) pesticides in wine. The analytes were extracted by a liquid-liquid procedure and the validate method was applied for a stability study of the pesticides in red and white wines, during 360 days. The pyrethroid pesticides showed lower stability, especially when stored under refrigeration. This finding may be related to the precipitation at low temperatures and to the hydrolysis of the ester bond. The anilinopyrimidine pesticides did not show high degradation levels, exhibiting greater stability. The main contribution of the work was the development of a new UHPLC-MS/MS method for pesticide analysis in wine. In addition, the results may contribute to assessing the consumer exposure risk, since the loss of these compounds can be a positive factor for consumer safety.
