A simple gas chromatographic procedure was developed for measuring the degree of rancidity in cottonseed oil and other vegetable oils. The procedure employs and internal standard for quantitating the amount of n ‐pentane in the oil samples and relates this quantity to organoleptic panel tests. The precision is good, and the results correlate well with panel tests. The procedure is very sensitive to detection and quantitation of oxidative changes in oils. Its use minimizes manipulation of the sample and thus avoids alteration of the rancidification products or the state of oxidation.
