The first real contribution to our knowledge of the composition of the yolk pigments was made by Thudichum (1869), who showed that the yellow pigment of egg yolk fat-soluble and unsaponifiable. He demonstrated the similarity between this pigment, which he called 'luteine', and the pigments of butter, corpus luteum and plant materials. Later Schunck (1903) compared the absorption spectrum of yolk pigment with those of a number of other naturally occurring pigments, and showed that the pigment was identical with leaf xanthophyll but different from carotene.
