Five strains of Streptococcus diacetilactis contained variants unable to form acetoin and gas from citrate. The variants differed from parent-type bacteria by not producing citrate permease, required for transporting citrate through the cell permeability barrier. Production of eitritase by the acetoinless mutants distinguished them from cultures of Streptococcus lactis and Streptococcus cremoris.
