Removal of the reducing sugars in the raw materials used for meat meal manufacturing by yeast or sulphite, prevented the Maillard reaction from taking place during batch dry rendering. The resultant meat meals had a similar available essential amino acid content and nutritive value to chicks as the freeze‐dried raw materials.
