Partial alkaline hydrolysis of polygalacturonic acid methyl ester gives products in which the COOH‐ and COOCH3‐groups are distributed alternatively along the chain molecule. Partial enzymatic hydrolysis, on the other hand, gives products in which the COOH‐ and COOCH3‐groups, respectively, are grouped together in blocks.
