THE development of stress cracks in popcorn as a re-sult of drying and rehydration processes was studied. Results indicate that the higher the rates of drying and/or rehydration, the larger the number of stress cracks produced. There was no significant difference in observed expansion volumes between samples with and without stress cracks. This was true for both single and multiple stress-crack samples.
