Observational study reveals adaptive spatial layouts and community partnerships in urban alcohol facilities, indicating their potential to bridge urban and rural food systems.
This study investigated 35 alcohol production facilities in town in Tokyo to clarify their spatial configurations and regional networks. Re-garding spatial configuration, the study revealed that these facilities are established through utilization of existing buildings and small-scale, movable equipment, while also providing visibility of the production process. Regarding regional networks, facilities involving cultivation and harvesting tend to facilitate citizen participation, whereas those utilizing diverse adjunct ingredients tend to collaborate with a wide range of businesses. These findings indicate that these facilities adapt to spatial constraints and function as sites that stimulate interest in food and connect urban and rural contexts.
