Sal(Shorea robusta), mango kernel(Mangifera indica), and mowrah (Madhuca latifolia) are three major tree borne seed fats and regarded as potential cocoabutter substitute when suitably modified. Modification of these fats by fractionation from solvent and blending of the fractions among themselves and with other suitable fatty material yielded a series of high priced confectionery fats.
