(Polycystic Ovary Syndrome (PCOS) was hormonal disorder that emerging from estrogen inequality and some form of inflammation as well as the life style with genetic factor most be main causes of this syndrome, so the current treatment PCOS by some plants was designed for management the symptom individuals when the pharmacological treatment maybe has side effected at long term. The study was included 20 patients at age-ranged 18-44years and research started from the beginning of January until May 2024, the sex hormones, prolactin, lipid profile and blood pressure of 20 PCOS measuring compared with20 healthy women at similar age ranged, when the patients' supplementation sunflower with flaxseeds breads 8 loafs daily until ten weeks. Patient was coming at endocrinology clinic department of Kirkuk teaching hospital and diagnosing PCOS according on the 2004Rotterdam criteria (Oligo- menorrhea less than8cycle each year namely more 35days than each menstrual cycle when Testosterone level more than75-82ng/dl). The results showed that patients with a waist-to-hip ratio (WHR) greater than 0.87, indicative of central abdominal obesity exhibited significantly higher concentrations of glucose and insulin. These patients also had hormonal imbalances, including elevated levels of testosterone and prolactin, along with reduced concentrations of progesterone and estrogen. Additionally, a decrease in high-density lipoprotein cholesterol (HDL-c) was observed in the serum of women with polycystic ovary syndrome (PCOS) compared to the control group with a WHR less than 0.87. A statistically significant difference was observed between PCOS patients before and after consuming sunflower and flaxseed breads, compared to the control group, in levels of insulin, sex hormones, prolactin, thyroid-stimulating hormone (TSH), and lipid profiles. The results suggest that regular intake of sunflower and flaxseed breads led to a reduction in low-density lipoprotein cholesterol (LDL-c), improved insulin resistance, and a decrease in elevated testosterone levels (above 29.85 ng/dL). After more than one year, these breads also appeared to inhibit lipid absorption in intestinal cells. Moreover, elevated prolactin, linked to menstrual irregularities, may serve as a risk factor for gestational weight gain and impaired glucose regulation.
