The presence of nitrite in processed meat products necessitates reliable methods for quantitative determination. In this study, cerium oxide nanoparticle (CeO 2 -NPs) -modified glassy carbon and carbon paste electrodes (CeO 2 /GCE and CeO 2 /CPE) were developed as electrochemical sensing platforms for the square-wave voltammetric (SWV) determination of nitrite. The two sensing platforms were independently optimized and evaluated in terms of linearity, analytical performance, precision, interference tolerance and applicability to processed meat products. CeO 2 /CPE exhibited two linear ranges of 10.00 - 240.00 µM (y = 0.0362x - 0.0335; r 2 = 0.9963) and 240 - 1000 µM (y = 0.0168x + 4.6429; r 2 = 0.9833), with a limit of detection (LOD) of 2.06 µM, a limit of quantification (LOQ) of 6.24 µM. CeO 2 /GCE exhibited a linear range of 20.00 - 2000.00 µM (y = 0.0322x + 0.0650; r 2 = 0.9985) with an LOD of 1.65 µM, an LOQ of 4.98 µM. The developed sensing platforms were applied to the tested processed meat samples, providing satisfactory recoveries for nitrite determination.
