Food safety is a key issue of global public health. As a foodborne pathogen - Bacillus cereus ( B. cereus ), it is widely distributed in nature and can cause diseases in both humans and animals. The rapid detection of B. cereus is of great significance for the prevention and control of such diseases. This article provides a detailed overview of the development of B. cereus detection techniques in food, transitioning from traditional methods to a series of current technologies such as immunology, molecular biology and MALDI-TOF-MS. The principles, advantages and disadvantages of various detection techniques, as well as their application progress, were outlined. Furthermore, the application and advantages of combining different techniques in the detection of B. cereus in food were demonstrated. The CRISPR/Cas system possesses the characteristics of high specificity, high sensitivity and ease of operation, and shows great potential in the field of foodborne pathogen detection. This article also explains that the combination of CRISPR/Cas technology with RPA, LFA and AI technologies can further enhance the detection rate and accuracy. The aforementioned technology can enable the early detection and prevention of B. cereus in food, ensuring food safety and preventing the outbreak of foodborne diseases. This article has certain reference value in the research on the detection techniques of B. cereus and other foodborne pathogens in food, and provides strong support for safeguarding food safety and maintaining human health.
