The paper presents the results of the study of quality indicators of crop production during ultrasonic processing. The relevance of the work is caused by significant losses of grain, oilseed and leguminous crops due to imperfect storage and processing methods. The objective of the study is to develop scientifically based, resource-saving technologies that minimize losses, extend storage life and increase the nutritional value of products. The work analyzes production methods of processing cereals, leguminous crops and unrefined vegetable oils. Mathematical models describing the influence of mode parameters of ultrasonic influence on qualitative parameters of products, such as moisture and ash content, have been developed. Methods of multiple regression and Box-Behnken design for optimization of processing parameters were used. Experimental studies confirmed that ultrasonic influence promotes effective grain cleaning, the beginning of shell peeling and reduction of time and energy consumption for moistening.
