This analysis evaluates antioxidant activity in carob fruits, highlighting the role of polyphenolic compounds and flavonoids.
Carob fruits (CF) are widely known due to their high content of biologically active compounds (BAC), including antioxidants - polyphenolic compounds (PPC), which were gradually isolated from pods and seeds. This paper presents the results of the characteristics and antioxidant activity of the extracts. It was found that the extracts obtained with a 70% aqueous-alcoholic solution contained the highest amounts of PPC in the pods and flavonoids in the seeds. The values of the minimum inhibitory activity - IC50 for samples extracted from the pods of the CF were an order of magnitude greater than for the seeds, indicating their high antioxidant activity.
