In an experiment conducted in the conditions of a farm of the production site of the Novgorod Research Institute on animals of the maternal Ayrshire breed and their two-breed crossbreeds obtained from industrial crossing with bulls of specialized meat breeds of the Charolaise, Hereford and Aberdeen Angus, their meat productivity and meat quality were studied when grown in the environment of a particular region. It was found out that the cost of feed units per 1 kg of weight gain in crossbreeds of all variants of crossing is less than that of control Ayrshire peers, crossbreed animals digest feed nutrients better (with the exception of raw fat). The difference in live weight at the age of 18 months is greater than Ayrshire peers in the group of Charolais crossbreeds by 23.8%, Hereford by 21.1% and Aberdeen-Angus by 9.3%. The advantage in slaughter yield in crossbred animals was 2.75–6.26%. The tasting evaluation and chemical composition showed the superiority of meat products of Ayrshire ? Aberdeen-Angus crossbreeds over other variants.
