Subject. The article considers trends in the development of livestock production, their impact on the change in milk and beef consumption in Russia. Objectives. The study aims to assess the state of development of the cattle breeding industry in the Republic of Tatarstan, identify factors that determined the existing trends. Methods. The study employed the statistical and economic method, monographic, comparative analysis and other methods of economic research. Results. The paper established trends in the consumption of dairy and meat products, its difference from the rational norms of food consumption that meet modern requirements of healthy nutrition, determined by the Ministry of Health of the Russian Federation. Despite the reduction in the number of livestock, there is a tendency towards increasing the dairy and meat production. The selling price has a major impact on changes in the profitability of livestock production in agricultural organizations. Conclusions. There is a decrease in the number of cattle both in the country as a whole and in the Republic of Tatarstan, while the volume of products is increasing. This stems from a significant increase in animal productivity. At the same time, financial results from the sale of industry products remain unstable. Livestock reduction in households is a cause for concern. It is due to high maintenance costs and low livestock productivity, instability and low prices for products, difficulties in creating a balanced feed base, etc. It is crucial to create and implement programs for cattle breeding development at the Federal and regional level, take measures to improve the State price regulation and pricing.
