Organoleptic assessment highlights quality in wine materials from Levokumskiy grapes, suggesting possible improvements.
Levokumskiy is a technical grape variety widely cultivated in all grape-growing regions of the Russian Federation, including the Stavropol Territory. The main use of the variety is the preparation of cognac wine materials. At the same time, the variety is rarely used to produce wines, due to certain features of its physico-chemical composition. The purpose of the research was to evaluate the technological orientation of the Levokumskiy grape variety to test the possibility of using it in the production of high-quality wine materials. The Levokumskiy grape variety of the 2024 harvest (national breeding), grown in the vineyards of PAO “Levokumskoye” (Stavropol Territory, Levokumsky district, Novokumskiy settlement), as well as must and wine materials made from it, were used as research objects. In the conditions of the laboratory and production department “Micro-winemaking” of the North Caucasian Federal Scientific Center of Horticulture, Viticulture, Wine-Making, prototypes of wine materials were prepared using various variants of the technology for the production of dry wines. To determine the physico-chemical parameters of the must, modern generally accepted research methods were used, according to current GOST standards. The organoleptic assessment of the wine materials was given by members of the tasting commission of the North Caucasian Federal Scientific Center of Horticulture, Viticulture, Wine-Making. All samples of the wine materials studied were characterized by pure, varietal aromas and flavors and received grades above the passing grade. Depending on the technological scheme used, wine materials were characterized by a wide range of shades of color, aroma and taste. The results obtained indicate the significant potential of the studied variety for obtaining high-quality wine products from it. Further research will be aimed at studying the physico-chemical parameters of the obtained wine materials.
