Pregastric esterase hydrolyzed synthetic triglyeerides containing butyric acid at greatly different rates. The triglyeerides of lower molecular weight were attacked most rapidly. All of the diglycerides from the digestions contained butyric acid; therefore, the diglyceridcs were not representative of the long-chain portion and were not suitable for stereospecific analysis. Some of the monoglycerides also contained butyric acid.
