Chlorinated hydrocarbon pesticides are preferentially concentrated in the surface layers of the fat globule. Electrophoretic evidence suggested that this is the result of binding of the pesticides to the proteins associated with the membrane. Lecithin, casein, and whey proteins increased the solubility of DDT and dieldrin in aqueous model systems. Electrophoretic evidence indicated that solubilization by casein and whey proteins resulted from binding of the pesticide to protein, whereas, binding with lecithin was the result of the formatiou of a phospholipid-pesticide micelle. Although many milk components were associated with pesticides, most of the pesticide on a total concentration basis was associated with triglycerides in the interior of the fat globule.
