Organophosphate (OPs)insecticides are capable of combating pests in food cultivation, acting through inhibition of the acetylcholinesterase enzyme (AChE), which catalyzes the hydrolysis of acetylcholine (ACh), a neurotransmitter fundamental for the functioning of the autonomic nervous system. The consumption of contaminated food and water can cause neurological diseases, therefore is a need for methods of rapid and reliable detection of these compounds, and here we highlight methods based on enzymatic biosensors. This work presents a wide discussion about the advances in the development of AChE-based biosensors for the detection of OPs, as well as suggestions for new investigations that may contribute to the area.
