Two symmetrical triglycerides, 2-oleoyl dipalmitin and 2-palmitoyl diolein, were synthesized and then subjected to hydrolysis at pH 6.6 by milk lipase. The results indicate that milk lipases preferentially hydrolyze the primary hydroxyl esters of synthetic long-chain triglycerides.
