The fact that sunlight exposure of bottled milk results in increased ascorbic acid oxidation and greater incidence and degree of oxidized and/or activated flavor development has been well established Apparently, no experimental data have been published regarding the effect of incandescent or fluorescent light, at intensities normally found in market milk storage coolers, on bottled whole milk. However, Weckel and Chicoye (5) have noted a slight change of flavor in bottled skimmilk within 12-24 hours exposure to fluorescent light.
