Light scattering in near infrared spectroscopy is an important phenomenon when using fluid milk.Experiments were carried out to measure the absorption of a near infrared overtone band of water in condensed milk: by transmission at a wavelength of 1.45 J1Rl in order to determine water content in condensed milk.Homogenization at high pressure and baseline correction of spectra permitted a linear relation between water content in milk and the absorption measured.
