The deterioration of fruits and vegetables has become more prominent and severe, with decay fungi as one of the main causes. The utilization of biocontrol yeasts has been shown to be a promising, environmentally friendly solution for combating fungal growth, with the addition of edible coatings creating a novel idea that greatly enhances the yeast strain properties. This review highlights the antifungal mechanism of utilizing biocontrol yeast in coatings, while also pointing out noticeable advantages that each material provides for further enhancing the products’ properties while extending their shelf life from fungal deterioration. Adding an edible coating to the yeast further enhances yeast viability through the encapsulation process and the nutrients that the coating provides. Additionally, matrix material with an antifungal mechanism also greatly contributes to elevating the antifungal efficacy of the yeast. Furthermore, biocontrol yeast also could help maintaining products’ quality through the development of an adequate internal micro‐atmosphere. Further research on toxicity assessment and application of microencapsulation and each material compatibility should be evaluated for future prospects.
