Bacillus species, prevalent in sugar beet factories, consume sucrose and produce potentially problematic exopolysaccharides during raw sugar extraction. This study reports the genome sequences of eight Bacillus isolates from sugar beet factories, providing taxonomic identification and genomic resources to support studies on the impact of Bacillus spp. during sugar extraction.
