l~[ost of the data reported in the two preceding papers were based upon a study of mixed milk. However, the first paper did include data concerning the acid degrees of fresh milk from individual cows, and the second contained a comparison of the rates of lipolysis in the milk of a few individuals. This paper contains the results of a more extensive investigation of the milk of individual cows, and of certain factors which might influence the lipase content of milk. The data are published to show the extent of variation, and the complexity of the relations involved. At the present time, no attempt at interpretation can be made.
