A quantitative study of various environmental and physiological factors on the monocarbonyl potential in heat-treated bovine milk fat was conducted. Analyses of monoearbonyls (as their 2,4-dinitrophenylhydrazones) indicate a definite seasonal trend, being higher in the winter than in the smumcr..~-highly significant (P < 1%) positive correlation between the monocarbonyls and the aliphatic deltalactones occurred over season.
