Very little research has been reported dealing with the taste of milk at the time it is drawn from the cow, except as it is influenced by the use of certain feeds in the rations of dairy cows or by stable odors. In the scoring of milk as carried out in the United States, certain deviations from the normal taste of milk have been recognized, but complete knowledge of the causes of these variations has been lacking.
